ALBACORE WHITE TUNA

The Bonito del Norte is a blue blue fish which is found only in the waters of the Cantabrian Sea and is fished with hooks one at a time, so it is a very precious food. It is rich in vitamins A and D as well as omega-3, helps regulate cholesterol level and prevent cardiovascular diseases.

In Conservas Hoya we catch the White Tuna using sustainable fishing methods and we elaborate our canned products in a traditional way, using the best raw material of our Cantabrian Sea. Both the fishing and the elaboration of the White Tuna are processes that require dedication, but more than work, they are tradition in Santoña. At Hoya, we preserve the tradition of our land in each can.

How is Albacore White Tuna made?

The Albacore White Tuna (Thunnus alalunga), is also known as “Albacore”, and is considered the most prized of its kind for its texture and flavor. We can distinguish it by its characteristic long central fin, which is what gives it the characteristic name of “alalunga”, or long wing. The white tuna spends the winter in the waters of the Azores, and does not reach the Bay of Biscay until late spring.

It is called coastal when a fish is in the best conditions of size and flavor to be caught. In the case of White Tuna, although it begins to reach our coasts in spring, its best coastal period is between the months of July and October.

In Conservas Hoya we keep the fishing tradition of our ancestors, so we fish one by one each Bonito, respecting our beloved natural environment, the Cantabrian Sea.

In the elaboration of our White Tuna we use raw material of the best quality, selected by ourselves in the fish market of the port of Santoña. The loins and belly of White Tuna are prepared by hand and bottled one by one with Olive Oil of superior quality, in order to obtain a good maturation.

But there are different ways to preserve this delicious fish. Apart from preparing the prized Albacore White Tuna in olive oil, we also use another canning method that fascinates us: the escabeche.

We clean the loins carefully and we pack them by hand in whole pieces in the traditional marinade of Conservas Hoya. The marinade brings a unique flavor that highlights several nuances of this fish.
